Great Summer Soup Recipe

This is a great recipe to incorporate some fresh summer corn. I made it the other night, and Landon said it was the best soup he's ever had:

Bacon-Corn Chowder Recipe
4 slices bacon, diced
1 medium onion, sliced
1 medium leek, sliced
2 stalks celery, sliced
2 carrots, thinly sliced
1 cup chicken stock
1 1/2 cup diced potatoes
4 ears corn, kernels sliced from cobs
1 1/2 cup milk
salt and pepper
pinch cayenne pepper (optional)
6 tablespoons whipping cream
chopped fresh parsley

Saute bacon in saucepan over medium heat for 3 minutes or until browned. Stir in onion, leek, celery and carrots; cook 4 minutes. Add stock; bring to boil. Add potatoes; return to boil. Cover pan; simmerr 25 minutes.

Add corn and milk; heat to simmering point. Simmer 5 minutes; season with salt, black pepper and red pepper. Stir in cream; heat until hot. Garnish w/ chopped parsley.

Serves 4
