Special Dinner

I spent most of today preparing for dinner tonight. Landon's grandpa Sam flew up to spend the weekend with us (and to see Samuel). He is staying with Landon's parents, but tonight they all came over for dinner. I wanted the house to look nice & dinner to be a good one. I don't entertain too much these days, and I had forgotten how much work it is, especially when you have a toddler to take care of on top of all the preparation! I made a vegetarian lasagne, pear & gorgonzola salad with roasted walnuts, & bought two loaves of the Artisan olive bread from New Seasons. Mike & Susan brought dessert (key lime pie from TJ's), wine, & Bailey's Irish Cream. Dinner turned out great, despite my mistake in pre-tossing the salad with the vinegar & olive oil two hours prior to dinner. It turned the salad into the consistency of slime! Luckily, I had purchased more spinach leaves than I needed for the lasagne, so I was able to throw another salad together, but it did cause me undo stress! I learned my lesson, though. Some of this stuff just takes experience. Won't do that one again! Samuel had a lot of fun interacting with his great-grandpa Sam.
